| Ingredients:

20 7 ounce Top Sirloin steaks, Diamond B trim, thick cut
|
|
2.5 C Bocelli Extra Virgin Roman Olive Oil
|
|
2.5 C Dry Italian wine (red)
|
|
2 Shallots, chopped fine
|
|
3 T Natural Pak Oregano
|
|
2 T Natural Pak Sage
|
|
2 T Natural Pak Rosemary
|
|
2 Large yellow onion, sliced
|
|
¼ C Fresh garlic, chopped
|
|
2 T Milled black pepper
|
|
5 Bay leaves
|
|
Instructions:
|
|
|
|
Combine all ingredients except steaks in metal bowl - blend well.
|
|
Cover and store in cooler for 2-4 hours.
|
|
Place steaks in marinade for 6 hours turning after 3 hours.
|
|
Remove steak from marinade, pat dry and grill to desired degree of doneness.
|
|
Slice on bias and fan on plate for service. |
