| Ingredients:

4 pcs. North Shore Salmon Fillet, 8 oz.

6 ozs. San Marco Pesto
|
|
2 ozs. Heavy Cream
|
|
¼ C Dry white wine
|
|
¼ tsp. Garlic, minced
|
|
¼ C Plugra Clarified Butter
|
|
Instructions:

|
Heat the butter in a pan and add the scallops.
|
|
Brown on both sides.
|
|
Add garlic, swirl pan then add white wine immediately to avoid burning garlic.
|
|
Reduce wine slightly.
|
|
Add pesto sauce - stir in.
|
|
Add heavy cream, lower heat slightly and reduce cream by ¼.
|
|
Adjust seasonings with salt and pepper - serve immediately.
