| Ingredients:

¾ C Bocelli Extra Virgin Olive Oil - Roman
|
|
¼ C Sherry vinegar
|
|
2 T Shallots, chopped
|
|
1 tsp Natural Pak Garlic, chopped
|
|
TT Salt & Pepper
|
|
¾ C Bleu Cheese Crumbles
|
|
4 C Asian Salad Blend
|
|
½ C Red onion, thinly sliced
|
|
1 C Baker Boy A/P flour
|
|
1 C Cornmeal
|
|
TT Natural Pak Cajun seasoning
|
|
32 ea Extra select oysters, drained and patted dry
|
|
1 C Natural Pak Smoky BBQ Sauce
|
|
8 ea Le Pan Europa Sandwich baguettes
|
|
Instructions:

|
|
In a small mixing bowl whisk oil and vinegar together
|
|
Add shallots and garlic
|
|
Season with salt & pepper, whisk well
|
|
Fold in bleu cheese, continuing to whisk until well blended
|
|
Combine the Asian Salad and the sliced red onion together well
|
|
Add the Bleu cheese dressing, cover, chill
|
|
Combine the flour and cornmeal and season with Cajun spice mix to taste
|
|
Season the oysters with salt, pepper and Cajun spice to taste
|
|
Dredge oysters well in flour mix, shake off excess flour
|
|
Cook in batches over medium high flame in sauté pan in oil (2-3 minutes)
|
|
Remove to paper towels to drain
|
|
Season again with Cajun spice (if desired)
|
|
Spread BBQ sauce over both sides of baked baguettes
|
|
Place 3-4 oysters on the bottom of each roll
|
|
Spoon some of the slaw blend over the oysters
|
|
Place top of each roll over slaw blend
|
|
Serve with favorite French fried potatoes |
