| Ingredients:

20 8 ounce Sirloin Fillet steaks, Diamond B trim
|
|
4 LB White mushrooms, cleaned, sliced
|
|
1 Large yellow onion, sliced
|
|
2 Bu. Green onion, sliced
|
|
1 C Country Manor Pure Bacon Bits
|
|
1 tsp. Ground black pepper
|
|
1 tsp. Fresh garlic, chopped
|
|
2 T Fresh parsley, chopped
|
|
5 C Haserot Culinaire Demi-glace
|
|
2 T Sweet butter
|
|
Instructions:
|
|
|
|
Heat butter, sauté onions until translucent.
|
|
Add garlic, scallions, mushrooms and bacon - cook for 3-5 minutes.
|
|
Season with salt and pepper, add parsley and demi-glace and reduce slightly.
|
|
Set to warm side until service.
|
|
Season the Sirloin Filets with salt and pepper, grill to desired degree of doneness.
|
|
Swirl 4-5 ounces of Woodsman mix onto service plate.
|
|
Place grilled steak on sauce and serve immediately. |
