| Ingredients:

1 RECIPE Ginger Marinade
|
|
12 7 oz. portions Black Grouper
|
|
3 Roma Tomatoes, peeled, seeded and chopped
|
|
½ Bunch Scallion, sliced
|
|
½ C Green Pepper, finely chopped
|
|
½ C Red Pepper, finely chopped
|
|
½ C Yellow Pepper, finely chopped
|
|
3 T MarketSource Fresh Cilantro, chopped
|
|
¼ C Ripe Olives, diced
|
|
Instructions:

|
Rinse grouper fillets and place in shallow baking dish.
|
|
Pour Ginger marinade over grouper and allow to marinate for 1 hour, turning once.
|
|
Combine all the vegetables, the cilantro and the olives together blending well.
|
|
Pour ¼ C of Ginger marinade into mix, cover and chill until service.
|
|
Drain grouper reserving marinade as basting sauce.
|
|
Grill fillets on hot char-grill about 12 minutes or
until tender and flaky, brushing with drained marinade as it cooks.
|
|
Serve with salsa.
|
|
Allow to sit overnight before using to thoroughly blend flavors.
|
|
